This loaf is made from French Campagne flour which combines wheat, rye and malt. It is made by the “Poolish” method whereby a wet dough is made on day one and left to ferment for more than 12 hours.
It is then trebled in volume by the addition of more flour and water and left for a further fermentation of around 2-4 hours. It has a well developed crust and nice springy crumb with a creamy colour.
